Ingredients:
– 1 1/2 cups warm water
– 1 tablespoon sugar
– 2 teaspoons active dry yeast
– 3 1/2 cups all-purpose flour
– 1 teaspoon salt
– 2 tablespoons olive oil
– 1/2 cup pizza sauce
– 1 cup shredded mozzarella cheese
– 1/2 cup shredded parmesan cheese
– Toppings:
– 1 cup sliced bell peppers
– 1 cup sliced onions
– 1 cup sliced mushrooms
– 1 cup sliced zucchini
– 1/4 cup chopped fresh cilantro
– 1-2 diced jalapeños or serrano peppers
– Salt and pepper, to taste
Instructions:
1. Make the dough: In a large bowl, combine warm water, sugar, and yeast. Let it sit for 5-7 minutes, until frothy. Add flour, salt, and olive oil, and knead for 5-7 minutes, until smooth.
2. Let the dough rise: Place the dough in a greased bowl, cover, and let rise in a warm place for 1-2 hours, until doubled in size.
3. Preheat the oven: Preheat oven to 425°F (220°C).
4. Prepare the toppings: Slice the bell peppers, onions, mushrooms, and zucchini. Chop the cilantro and dice the jalapeños or serrano peppers.
5. Assemble the pizza: Punch down the dough and shape into a circle or rectangle. Place on a greased baking sheet or pizza stone. Spread the pizza sauce, leaving a small border around the edges. Top with mozzarella and parmesan cheese, followed by the sliced vegetables, chopped cilantro, and diced peppers.
6. Bake the pizza: Bake for 15-20 minutes, until the crust is golden brown and the cheese is melted and bubbly.
7. Serve and enjoy: Remove from oven and let cool for a few minutes. Slice and serve hot.
