Ingredients:
– 2 pounds chicken wings
– 2 tablespoons lemon pepper seasoning
– 1 tablespoon garlic powder
– 1 tablespoon paprika
– 1 tablespoon olive oil
– 1/2 cup lemon juice
– Salt and pepper, to taste
Instructions
1. Preheat oven to 400°F (200°C).
2. In a large bowl, mix together lemon pepper seasoning, garlic powder, paprika, salt, and pepper.
3. Add the chicken wings to the bowl and toss to coat with the seasoning mixture.
4. Drizzle the olive oil over the wings and toss to coat.
5. Line a baking sheet with aluminum foil and spray with cooking spray. Arrange the wings on the baking sheet in a single layer.
6. Bake for 25-30 minutes or until the wings are cooked through and crispy.
7. While the wings are baking, mix the lemon juice and 1 tablespoon of water in a small bowl.
8. Remove the wings from the oven and brush with the lemon juice mixture.
9. Return the wings to the oven and bake for an additional 5-7 minutes or until the wings are caramelized.
Yellow Rice
Ingredients:
– 1 cup uncooked white rice
– 2 cups water
– 1 tablespoon saffron threads, soaked in 2 tablespoons hot water
– 1 tablespoon olive oil
– 1 small onion, diced
– 1 clove garlic, minced
– Salt, to taste
Instructions
1. Heat the olive oil in a medium saucepan over medium heat.
2. Add the diced onion and cook until translucent, about 3-4 minutes.
3. Add the garlic and cook for an additional minute.
4. Add the rice to the saucepan and stir to coat with the oil and mix with the onion and garlic.
5. Add the water and soaked saffron threads to the saucepan. Bring to a boil.
6. Reduce the heat to low, cover, and simmer for 15-20 minutes or until the water is absorbed and the rice is tender.
7. Fluff the rice with a fork and season with salt to taste.
Macaroni
Ingredients:
– 8 oz macaroni
– 2 cups water
– Salt, to taste
Instructions
1. Bring the water to a boil in a large pot. Add salt to taste.
2. Add the macaroni to the pot and cook until al dente, about 8-10 minutes.
3. Drain the macaroni and return it to the pot. Add a little water to prevent sticking.
Assembly
1. Serve the lemon pepper wings with yellow rice and macaroni.
2. Garnish with lemon wedges and chopped fresh herbs, if desired.
