Onion Rice new year special

Ingredients

– 1 cup uncooked white or brown rice
– 2 cups water
– 2 medium onions, thinly sliced
– 2 tablespoons vegetable oil
– 1 teaspoon salt
– 1/4 teaspoon black pepper
– 1/4 teaspoon paprika (optional)

Instructions

1. Heat oil in a large saucepan over medium heat.
2. Add sliced onions and cook until they’re translucent and lightly browned, stirring occasionally (about 8-10 minutes).
3. Add rice to the saucepan and stir to coat with oil and mix with onions. Cook for 2-3 minutes.
4. Add water, salt, pepper, and paprika (if using) to the saucepan. Stir well.
5. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until the water is absorbed and the rice is tender.
6. Fluff the onion rice with a fork and serve hot.

Tips and Variations

– Use different types of onions, such as red or yellow onions, for varying flavors.
– Add other aromatics like garlic, ginger, or carrots to the saucepan with the onions.
– Mix in chopped fresh herbs, such as parsley or cilantro, for added freshness.
– For a Middle Eastern twist, add a sprinkle of sumac or a squeeze of lemon juice to the onion rice.
