Ingredients
– 4 Italian sausage links (sweet or hot, your preference)
– 1 large onion, sliced
– 2 large bell peppers (any color), sliced
– 4 garlic cloves, minced
– 1 tablespoon olive oil
– Salt and pepper, to taste
– 1/4 teaspoon dried oregano
– 1/4 teaspoon dried basil
– 1/4 cup red wine (optional)
Instructions
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the Italian sausage links and cook until browned on all sides, about 5-7 minutes. Remove from the skillet and set aside.
3. Add the sliced onions to the skillet and cook until they start to caramelize, about 5 minutes.
4. Add the sliced bell peppers to the skillet and continue cooking until they’re tender, about 5-7 minutes.
5. Add the minced garlic to the skillet and cook for 1 minute, until fragrant.
6. Add the browned Italian sausage back to the skillet, along with the dried oregano, basil, salt, and pepper.
7. If using red wine, add it to the skillet and stir to deglaze, scraping up any browned bits from the bottom.
8. Reduce heat to medium-low and simmer the mixture for 10-15 minutes, until the sausage is cooked through and the vegetables are tender.
9. Serve hot, garnished with fresh parsley or basil, if desired.
Tips
– Use sweet or hot Italian sausage, depending on your preference.
– You can also add other vegetables, such as mushrooms or zucchini, to the skillet.
– Serve with crusty bread or over rice or pasta for a hearty meal.
