Blueberry + Cream Cheese Bread

Ingredients

For the Bread:

  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream or plain Greek yogurt
  • 1 cup fresh or frozen blueberries (do not thaw if frozen)

For the Cream Cheese Filling:

  • 8 oz cream cheese, softened
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract

Instructions

Step 1: Preheat and Prepare

  1. Preheat your oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.

Step 2: Make the Cream Cheese Filling

  1. In a medium bowl, beat the cream cheese, sugar, egg, and vanilla extract until smooth and creamy. Set aside.

Step 3: Prepare the Bread Batter

  1. In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  2. In another bowl, cream the butter and sugar together until light and fluffy.
  3. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract and sour cream.
  4. Gradually fold the dry ingredients into the wet ingredients until just combined. Be careful not to overmix.
  5. Gently fold in the blueberries.

Step 4: Assemble the Bread

  1. Pour half of the bread batter into the prepared loaf pan and spread evenly.
  2. Spread the cream cheese filling over the batter.
  3. Top with the remaining batter, spreading it gently to cover the cream cheese layer.

Step 5: Bake

  1. Bake in the preheated oven for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
  2. If the top starts to brown too quickly, cover it loosely with aluminum foil during the last 15 minutes of baking.

Step 6: Cool and Serve

  1. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  2. Slice and serve as is, or with a light dusting of powdered sugar for extra sweetness.

Tips for Success

  • Room Temperature Ingredients: Ensure the butter, eggs, and cream cheese are at room temperature for a smoother batter.
  • Blueberries: Toss blueberries with a tablespoon of flour before adding them to the batter to prevent them from sinking.
  • Storage: Store in an airtight container in the refrigerator for up to 5 days.
