Ingredients:
– 4 slices of bacon, diced
– 1 large onion, diced
– 2 large bell peppers (any color), diced
– 4 large eggs
– 1 cup of shredded cheddar cheese
– 1/2 cup of cooked sausage (such as breakfast links or patties), diced
– 2-3 medium-sized potatoes, peeled and diced
– Salt and pepper, to taste
– Cooking oil or butter, for greasing the skillet
Instructions:
1. Cook the bacon: In a large skillet, cook the diced bacon over medium heat until crispy. Remove the cooked bacon from the skillet and set aside.
2. Soften the vegetables: In the same skillet, add a little more oil or butter if necessary, then sauté the diced onion and bell peppers until they’re tender.
3. Add the potatoes: Add the diced potatoes to the skillet and continue cooking until they’re golden brown and cooked through.
4. Add the cooked sausage and bacon: Stir in the diced cooked sausage and crispy bacon.
5. Make wells for the eggs: Use a spatula to create 4 wells in the skillet mixture. Crack an egg into each well.
6. Cover and cook: Cover the skillet with a lid and cook until the whites are set and the yolks are cooked to your desired doneness.
7. Top with cheese: Sprinkle shredded cheddar cheese over the top of the skillet.
8. Serve and enjoy: Serve hot, garnished with chopped fresh herbs if desired.
