Chicken Leg Pepper

Ingredients:

– 4-6 chicken legs (drumsticks and thighs)
– 2 large onions, chopped
– 3-4 large bell peppers (any color), chopped
– 2-3 cloves garlic, minced
– 1 tablespoon olive oil
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1/2 teaspoon paprika
– 1/4 teaspoon cayenne pepper (optional)

Instructions:

1. Preheat oven to 400°F (200°C).
2. In a large bowl, whisk together olive oil, salt, black pepper, paprika, and cayenne pepper (if using).
3. Add the chopped onions and bell peppers to the bowl and toss to coat with the oil and spice mixture.
4. Add the chicken legs to the bowl and toss to coat with the oil and spice mixture, making sure they’re evenly coated.
5. Line a baking sheet with aluminum foil or parchment paper and arrange the chicken legs and vegetables in a single layer.
6. Bake for 35-40 minutes, or until the chicken is cooked through and the vegetables are tender.
7. Serve hot and enjoy!

Optional:

– You can also add other vegetables like carrots, potatoes, or zucchini to the baking sheet.
– If you prefer a crispy exterior on your chicken, you can broil the chicken legs for an additional 2-3 minutes after baking. Keep an eye on them to prevent burning.
