Instructions:
For the Pork Belly:
1. Preheat oven to 400°F (200°C).
2. In a small bowl, mix together brown sugar, smoked paprika, salt, and black pepper.
3. Rub the spice mixture all over the pork belly, making sure to coat it evenly.
4. Heat the olive oil in a large oven-safe skillet over medium-high heat.
5. Sear the pork belly until browned on all sides, about 2-3 minutes per side.
6. Transfer the skillet to the preheated oven and roast the pork belly for 20-25 minutes, or until crispy on the outside and tender on the inside.
For the Dipping Sauce:
1. In a small bowl, whisk together hoisin sauce, rice vinegar, honey, grated ginger, garlic, and red pepper flakes (if using).
2. Taste and adjust the sauce as needed.
Assembly:
1. Remove the pork belly from the oven and let it rest for 5 minutes.
2. Slice the pork belly into thick strips.
3. Serve the crispy pork belly with the dipping sauce.
