Instructions
For the Chicken
1. Place the chicken, chicken broth, onion, garlic, carrots, celery, thyme, salt, and pepper in a 6-quart Crockpot. Stir to combine.
2. Cook on low for 6-8 hours or high for 3-4 hours.
For the Dumplings
1. In a large bowl, whisk together the flour, baking powder, and salt.
2. Cut in the shortening or butter until the mixture resembles coarse crumbs.
3. Gradually add the warm water, stirring with a fork until the dough comes together.
Assembly and Cooking
1. About 30 minutes before serving, turn the Crockpot to high (if it’s not already).
2. Drop the dumpling dough by tablespoonfuls onto the surface of the stew.
3. Cover the Crockpot and cook for an additional 20-30 minutes, or until the dumplings are cooked through and have puffed up slightly.
4. Serve the chicken and dumplings hot, garnished with chopped fresh herbs if desired.
