Ingredients:
For the Chicken:
– 1 pound boneless, skinless chicken breast or thighs, cut into bite-sized pieces
– 1 cup all-purpose flour
– 1 teaspoon paprika
– 1/2 teaspoon garlic powder
– 1/2 teaspoon onion powder
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 1 cup buttermilk
For the Pancakes:
– 1 cup all-purpose flour
– 2 tablespoons sugar
– 2 teaspoons baking powder
– 1/4 teaspoon salt
– 1 cup milk
– 1 large egg
– 2 tablespoons melted unsalted butter
– Butter or oil for greasing the pan
For the Syrup and Toppings:
– Maple syrup or honey
– Fresh fruit (such as strawberries, blueberries, or bananas)
– Whipped cream or whipped topping
– Powdered sugar
Instructions:
Step 1: Prepare the Chicken
1. In a shallow dish, mix together the flour, paprika, garlic powder, onion powder, salt, and pepper.
2. Pour the buttermilk into a separate shallow dish.
3. Dip each piece of chicken into the buttermilk, coating completely, then roll in the flour mixture to coat. Place the coated chicken on a plate or tray.
4. Heat about 1/2-inch (1 cm) of oil in a large skillet over medium-high heat. Fry the chicken pieces until golden brown and cooked through, about 5-7 minutes per side.
Step 2: Make the Pancakes
1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
2. In a separate bowl, whisk together the milk, egg, and melted butter.
3. Pour the wet ingredients into the dry ingredients and stir until just combined. The batter should still be slightly lumpy.
4. Heat a non-stick skillet or griddle over medium heat. Grease the pan with butter or oil.
5. Using a 1/4 cup measuring cup, scoop the batter onto the pan.
6. Cook the pancakes for 2-3 minutes, until bubbles appear on the surface and the edges start to dry. Flip and cook for another 1-2 minutes, until golden brown.
Step 3: Assemble the Bundle
1. Place a few pancakes on a plate or platter.
2. Add a few pieces of fried chicken on top of the pancakes.
3. Drizzle with maple syrup or honey.
4. Top with fresh fruit, whipped cream, and a sprinkle of powdered sugar.
Tips and Variations:
– Use different types of milk, such as almond milk or soy milk, for a non-dairy version.
– Add different spices or herbs to the chicken coating for extra flavor.
– Use different types of fruit or toppings, such as chocolate chips or nuts, to change up the flavor and texture.
– Make the pancakes and chicken ahead of time and reheat as needed.
