Ingredients
– 1 pound boneless, skinless chicken breast or tenders, cut into small nugget-sized pieces
– 1 cup all-purpose flour
– 1 teaspoon paprika
– 1/2 teaspoon garlic powder
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 1/4 teaspoon cayenne pepper (optional)
– 2 eggs
– 1 cup panko breadcrumbs
– Vegetable oil for frying
Instructions
1. In a shallow dish, mix together the flour, paprika, garlic powder, salt, black pepper, and cayenne pepper (if using).
2. In a separate dish, beat the eggs.
3. In a third dish, place the panko breadcrumbs.
4. Dip each piece of chicken into the flour mixture, coating evenly, then into the eggs, and finally into the breadcrumbs, pressing gently to adhere.
5. Heat about 1/2-inch (1 cm) of vegetable oil in a large skillet over medium-high heat until it reaches 350°F (180°C).
6. Carefully place the breaded chicken nuggets into the hot oil and fry for about 5-7 minutes on each side, or until golden brown and cooked through.
7. Remove the nuggets from the oil with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
8. Serve the chicken nuggets hot with your favorite dipping sauce.
Baked Version
If you prefer to bake the chicken nuggets instead of frying, preheat your oven to 400°F (200°C). Place the breaded nuggets on a baking sheet lined with parchment paper and bake for about 15-20 minutes, or until cooked through and crispy.
