🍣 Sriracha Honey Salmon Bowls with Roasted Cauliflower

Ingredients:

For the Salmon:

– 4 salmon fillets (6 ounces each)
– 2 tablespoons honey
– 1 tablespoon sriracha sauce
– 1 tablespoon soy sauce
– 1 tablespoon rice vinegar
– 1 teaspoon grated ginger
– 1/4 teaspoon black pepper

For the Roasted Cauliflower:

– 1 head of cauliflower, broken into florets
– 2 tablespoons olive oil
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 1/4 teaspoon garlic powder

For the Bowls:

– Cooked white or brown rice
– Chopped green onions
– Sesame seeds
– Pickled ginger slices (optional)

Instructions:

1. Preheat oven to 425°F (220°C).
2. Line a baking sheet with parchment paper.
3. Toss cauliflower florets with olive oil, salt, pepper, and garlic powder on the prepared baking sheet. Roast for 20-25 minutes or until tender and lightly browned.
4. In a small bowl, whisk together honey, sriracha sauce, soy sauce, rice vinegar, grated ginger, and black pepper.
5. Place salmon fillets in a shallow dish and brush the sriracha honey glaze evenly over both sides of the fish.
6. Heat a non-stick skillet or grill pan over medium-high heat. Cook salmon for 3-4 minutes per side or until cooked through.
7. Divide cooked rice between four bowls. Top with roasted cauliflower, cooked salmon, chopped green onions, sesame seeds, and pickled ginger slices (if using).
8. Serve immediately and enjoy!
