Ingredients:
For the cake:
– 2 1/4 cups all-purpose flour
– 1 1/2 cups granulated sugar
– 2 teaspoons baking powder
– 1 teaspoon salt
– 1/2 cup unsalted butter, softened
– 1 cup whole milk
– 2 large eggs
– 2 teaspoons pure vanilla extract
– 1 cup white chocolate chips
For the cheesecake center:
– 12 ounces cream cheese, softened
– 1/2 cup granulated sugar
– 2 large eggs
– 1 teaspoon pure vanilla extract
For the frosting:
– 1 cup unsalted butter, softened
– 2 cups powdered sugar
– 1 cup white chocolate chips
Instructions:
Step 1: Prepare the cheesecake center
1. Preheat oven to 325°F (160°C).
2. In a medium bowl, beat the cream cheese until smooth.
3. Add granulated sugar, eggs, and vanilla extract. Mix until well combined.
4. Pour the cheesecake mixture into a piping bag or a zip-top plastic bag with a corner cut off.
Step 2: Prepare the cake
1. Preheat oven to 350°F (180°C). Grease and flour three 9-inch (23cm) round cake pans.
2. In a medium bowl, whisk together flour, sugar, baking powder, and salt.
3. In a large bowl, whisk together butter, milk, eggs, and vanilla extract.
4. Add the dry ingredients to the wet ingredients and mix until just combined.
5. Melt the white chocolate chips in a double boiler or in the microwave in 30-second increments, stirring between each interval. Allow the white chocolate to cool slightly.
6. Fold the white chocolate into the cake batter until well combined.
Step 3: Assemble and bake the cake
1. Divide the cake batter evenly among the prepared pans.
2. Pipe the cheesecake mixture in a circular motion, starting from the outside and working your way in, to create a cheesecake “center” in each cake layer.
3. Bake the cakes for 25-30 minutes or until a toothpick inserted in the center comes out clean.
4. Allow the cakes to cool in the pans for 5 minutes before transferring them to a wire rack to cool completely.
Step 4: Prepare the frosting
1. Beat the softened butter until creamy.
2. Gradually add the powdered sugar, beating until smooth and creamy.
3. Melt the white chocolate chips in a double boiler or in the microwave in 30-second increments, stirring between each interval. Allow the white chocolate to cool slightly.
4. Fold the white chocolate into the frosting until well combined.
Step 5: Assemble the cake
1. Place one cake layer on a serving plate or cake stand.
2. Spread a layer of frosting on top of the cake layer.
3. Repeat the process with the remaining two cake layers.
4. Frost the outside of the cake with the remaining frosting.
Step 6: Decorate the cake (optional)
1. Melt additional white chocolate chips and drizzle over the top of the cake.
2. Sprinkle chopped nuts or shredded coconut over the top of the cake.
Step 7: Serve and enjoy!
1. Slice the cake and serve.
2. Store any leftovers in an airtight container in the refrigerator for up to 3 days.
