Ingredients
– 1 large sweet potato, cooked and mashed
– 1/2 cup (115g) powdered sugar
– 1/4 teaspoon ground cinnamon
– 1/4 teaspoon ground nutmeg
– 1/4 teaspoon salt
– 1/2 cup (120ml) heavy cream
– 1 tablespoon unsalted butter, melted
– 1 package White Oreos
– Vegetable oil for frying
– Confectioners’ sugar for dusting
– Optional: chopped nuts or sprinkles for garnish
Instructions
1. Make the sweet potato filling: In a medium bowl, combine the mashed sweet potato, powdered sugar, cinnamon, nutmeg, and salt. Mix until smooth. Stir in the heavy cream and melted butter until well combined.
2. Prepare the Oreos: Twist apart the White Oreos and set aside the wafers.
3. Assemble the stuffed Oreos: Spoon a small amount of the sweet potato filling onto one half of the Oreo wafer. Top with another Oreo wafer to create a sandwich.
4. Dip in batter and fry: Heat about 2-3 inches (5-7.5 cm) of vegetable oil in a deep frying pan to 350°F (180°C). Dip each stuffed Oreo into a light batter (such as a simple pancake batter) and then carefully place into the hot oil. Fry for 2-3 minutes on each side, or until golden brown.
5. Drain and dust: Remove the fried Oreos from the oil with a slotted spoon and place on a paper towel-lined plate to drain excess oil. Dust with confectioners’ sugar and garnish with chopped nuts or sprinkles, if desired.
6. Serve and enjoy: Serve the Sweet Potato Stuffed Fried White Oreos warm and indulge in the sweet and crispy treat!
