– 1 1/2 cups warm water
– 2 teaspoons active dry yeast
– 3 1/2 cups all-purpose flour
– 1 teaspoon salt
– 1 tablespoon sugar
– 2 tablespoons olive oil
– 1 egg, beaten (for egg wash)
– Sesame seeds for coating
Instructions
1. In a large bowl, combine warm water and yeast. Let it sit for 5-10 minutes until frothy.
2. Add flour, salt, sugar, and olive oil to the bowl. Mix until a dough forms.
3. Knead the dough for 10-15 minutes until smooth and elastic.
4. Place the dough in a greased bowl, cover, and let it rise in a warm place for 1-2 hours, or until doubled in size.
5. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
6. Divide the dough into 4-6 equal pieces, depending on desired size. Roll each piece into a long rope.
7. Twist each rope into a circle, overlapping the ends to form a ring. Place on the prepared baking sheet.
8. Brush the tops with beaten egg and sprinkle with sesame seeds.
9. Bake for 20-25 minutes, or until golden brown.
10. Remove from the oven and let cool on a wire rack.

– Traditionally, Simit is baked in a wood-fired oven, giving it a distinctive crispy crust. To achieve this at home, try baking at a higher temperature (450°F/230°C) for a shorter time (15-20 minutes).
– Simit is best consumed fresh, but it can be stored in an airtight container for up to 2 days.
