– 6 large eggs
– 1/2 cup (115g) cottage cheese
– 1/2 cup (55g) shredded cheddar cheese
– 1/4 cup (30g) diced ham or bacon
– 1 tablespoon chopped fresh chives or parsley
– Salt and pepper, to taste
– Cooking spray or oil
Instructions
1. Preheat the sous vide machine: Set the sous vide machine to 167°F (75°C).
2. Prepare the egg mixture: In a blender or food processor, combine the eggs, cottage cheese, shredded cheese, diced ham or bacon, and chopped chives or parsley. Blend until smooth.
3. Pour into molds: Pour the egg mixture into 6-8 silicone egg bite molds or small jars. Spray the molds with cooking spray or brush with oil.
4. Sous vide cooking: Place the molds in the sous vide machine and cook for 45-60 minutes, or until the eggs are set and the internal temperature reaches 160°F (71°C).
5. Chill and store: Once cooked, remove the egg bites from the molds and chill in the refrigerator for at least 30 minutes. Store in an airtight container for up to 5 days.
6. Reheat and serve: Reheat the egg bites in the microwave for 20-30 seconds or in a toaster oven at 350°F (180°C) for 5-7 minutes. Serve warm.
