Ingredients
– 1 pound (450g) steak tips (such as sirloin or ribeye)
– 2 tablespoons (30g) unsalted butter, softened
– 3 cloves garlic, minced
– 1 cup (115g) rigatoni pasta
– 2 cups (475ml) marinara sauce
– 1 cup (115g) shredded mozzarella cheese
– 1/2 cup (55g) grated Parmesan cheese
– Salt and pepper, to taste
– Fresh parsley, chopped (optional)
Instructions
1. Cook the rigatoni: Bring a large pot of salted water to a boil. Cook the rigatoni according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
2. Make the garlic butter: In a small bowl, mix together the softened butter, minced garlic, salt, and pepper.
3. Cook the steak tips: Heat a large skillet over medium-high heat. Add the garlic butter and let melt. Add the steak tips and cook for 3-4 minutes per side, or until cooked to desired doneness. Transfer to a plate and cover with foil to keep warm.
4. Make the cheesy rigatoni: In the same skillet, add the marinara sauce and bring to a simmer. Stir in the shredded mozzarella cheese and grated Parmesan cheese until melted and smooth. Add the cooked rigatoni pasta and toss to coat, adding some reserved pasta water if needed.
5. Serve: Slice the cooked steak tips and serve on top of the cheesy rigatoni pasta. Garnish with chopped fresh parsley, if desired.
