Ingredients:
– 1 pound hot sausage (such as Jimmy Dean), casings removed
– 1 (10-ounce) can Rotel diced tomatoes with green chilies, drained
– 8 ounces cream cheese, softened
– 1 cup shredded cheddar cheese
– 1/2 cup biscuit or baking mix (such as Bisquick)
– 1/4 cup chopped green onions (optional)
Instructions:
1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
2. In a large bowl, combine the sausage, Rotel, cream cheese, and cheddar cheese. Mix well with your hands or a wooden spoon until just combined.
3. Add the biscuit or baking mix to the sausage mixture and mix until a dough forms.
4. Use your hands to shape the dough into small balls, about 1 1/2 inches (3.8 cm) in diameter. Place the balls onto the prepared baking sheet, leaving about 1 inch (2.5 cm) of space between each ball.
5. Bake for 15-20 minutes, or until lightly browned on the bottom.
6. Remove from oven and garnish with chopped green onions (if using). Serve warm.
