Ingredients:
– 4 large shrimp, peeled and deveined
– 2 tablespoons unsalted butter, softened
– 2 cloves garlic, minced
– 1 teaspoon paprika
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 2 tablespoons mayonnaise
– 2 tablespoons grated cheddar cheese
– 2 tablespoons grated mozzarella cheese
– 4 slices of bread (preferably a crusty bread)
– Fresh parsley, chopped (optional)
Instructions:
1. Preheat a grill or grill pan to medium-high heat.
2. In a bowl, mix together the shrimp, butter, garlic, paprika, salt, and pepper.
3. Grill the shrimp for 2-3 minutes per side, or until they’re pink and cooked through.
4. Meanwhile, butter one side of each bread slice.
5. Place one bread slice, butter-side down, on the grill.
6. Top with a slice of cheese, a few grilled shrimp, and a dollop of mayonnaise.
7. Place another bread slice, butter-side up, on top.
8. Grill for 2-3 minutes or until the bread is golden brown and the cheese is melted.
9. Flip and grill for another 2-3 minutes or until the other side is also golden brown.
10. Repeat with the remaining ingredients.
11. Serve immediately and garnish with chopped parsley if desired.
