Ingredients
– 2 cups rice flour
– 1 cup grated coconut
– 1 cup date palm jaggery (or brown sugar)
– 1/2 teaspoon salt
– 1/4 teaspoon baking powder
– 1/4 cup ghee or oil
– 1 cup lukewarm water
– Chopped nuts or sesame seeds for garnish (optional)
Instructions
1. Prepare the dough: In a large mixing bowl, combine the rice flour, grated coconut, date palm jaggery (or brown sugar), salt, and baking powder. Mix well.
2. Add ghee or oil: Add the ghee or oil to the mixture and mix until the dough comes together.
3. Add lukewarm water: Gradually add the lukewarm water to the dough and knead until smooth.
4. Rest the dough: Cover the dough with a damp cloth and let it rest for 30 minutes.
5. Shape the pitha: Divide the dough into small balls and flatten each ball into a round shape.
6. Cook the pitha: Heat a non-stick pan or griddle over medium heat. Cook the pitha for 2-3 minutes on each side, until golden brown.
7. Serve: Serve the Sujir Pitha warm or at room temperature, garnished with chopped nuts or sesame seeds if desired.
