Ingredients
– 2 1/4 cups (285g) all-purpose flour
– 1 cup (200g) granulated sugar
– 2 teaspoons baking powder
– 1 teaspoon salt
– 1/2 cup (115g) unsalted butter, softened
– 2 large eggs
– 2 teaspoons grated orange zest
– 2 tablespoons freshly squeezed orange juice
– 1 teaspoon orange blossom water
– 1 cup (120g) chopped fresh pistachios
Instructions
1. Preheat the oven to 350°F (180°C). Grease a 9×5-inch loaf pan and line with parchment paper.
2. In a medium bowl, whisk together flour, sugar, baking powder, and salt.
3. In a large bowl, whisk together butter, eggs, orange zest, orange juice, and orange blossom water.
4. Add the dry ingredients to the wet ingredients and stir until just combined.
5. Fold in the chopped pistachios.
6. Pour the batter into the prepared loaf pan and smooth the top.
7. Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
8. Remove from the oven and let cool in the pan for 10 minutes.
9. Transfer to a wire rack to cool completely.
Optional Glaze
– 1 cup (200g) powdered sugar
– 2 tablespoons freshly squeezed orange juice
– 1/4 teaspoon orange blossom water
Whisk together until smooth and drizzle over the cooled cake.
