Ingredients
– 2 slices of bread (whole wheat or white)
– 1/4 cup of shredded cheese (mozzarella, cheddar, or your favorite)
– 1/2 cup of sliced vegetables (choose 2-3):
– Bell peppers
– Onions
– Zucchini
– Mushrooms
– Spinach
– Tomatoes
– 1 tablespoon of spread (mayonnaise, hummus, or avocado)
– Salt and pepper to taste
– Cooking spray or butter for grilling
Instructions
1. Preheat a grill or grill pan to medium heat.
2. Butter or spray one side of each bread slice.
3. On the unbuttered side of one bread slice, spread a layer of your chosen spread.
4. Add the shredded cheese on top of the spread.
5. Add the sliced vegetables on top of the cheese.
6. Place the second bread slice, buttered side up, on top of the vegetables.
7. Place the sandwich on the grill and cook for 2-3 minutes or until the bread is golden brown and the cheese is melted.
8. Carefully flip the sandwich over and cook for another 2-3 minutes or until the other side is also golden brown.
9. Remove the sandwich from the grill and let it cool for a minute or two.
10. Slice the sandwich in half and serve immediately.
