beef stroganoff with mushrooms

Ingredients

– 1 pound beef strips (sirloin or ribeye)
– 1 tablespoon vegetable oil
– 1 onion, finely chopped
– 2 cups mixed mushrooms (button, cremini, shiitake)
– 2 cloves garlic, minced
– 1 tablespoon tomato paste
– 2 tablespoons Dijon mustard
– 1 teaspoon paprika
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 1 cup beef broth
– 1 cup heavy cream
– 1 tablespoon chopped fresh parsley
– 1 cup cooked egg noodles
– Chopped fresh dill, for garnish (optional)

Instructions

1. Cook the egg noodles: Bring a large pot of salted water to a boil. Cook the egg noodles according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
2. Prepare the beef: Slice the beef into thin strips. Season with salt and pepper.
3. Sear the beef: Heat the oil in a large skillet over medium-high heat. Add the beef and cook until browned, about 3-4 minutes. Remove from the skillet and set aside.
4. Soften the onions: Reduce heat to medium. Add the chopped onion to the skillet and cook until softened, about 3-4 minutes.
5. Add the mushrooms: Add the mixed mushrooms to the skillet and cook until they release their liquid and start to brown, about 5 minutes.
6. Add the garlic and spices: Add the minced garlic, paprika, and mustard to the skillet. Cook for 1 minute, stirring constantly.
7. Add the tomato paste: Add the tomato paste to the skillet and cook for 1 minute, stirring constantly.
8. Add the beef broth and cream: Pour in the beef broth and heavy cream. Stir to combine, scraping up any browned bits from the bottom of the skillet.
9. Return the beef: Add the cooked beef back to the skillet. Stir to coat with the sauce.
10. Simmer and serve: Simmer the stroganoff over low heat for 5-7 minutes, stirring occasionally. Serve over cooked egg noodles, garnished with chopped parsley and dill (if using).

Tips and Variations

– Use a combination of mushroom varieties for added depth of flavor.
– Add a pinch of nutmeg or allspice to the sauce for extra warmth.
– Serve with steamed vegetables or a side salad for a well-rounded meal.
– Substitute the heavy cream with Greek yogurt or sour cream for a lighter version.
