Ingredients:
For the cake:
– 2 1/4 cups all-purpose flour
– 1 teaspoon baking powder
– 1 teaspoon baking soda
– 1 teaspoon salt
– 1 cup unsalted butter, softened
– 1 3/4 cups granulated sugar
– 4 large eggs, at room temperature
– 2 teaspoons vanilla extract
– 1 cup diced apples (about 2-3 apples)
– 1 cup chopped pecans
For the caramel glaze:
– 1 cup heavy cream
– 1/2 cup unsalted butter
– 1 1/2 cups granulated sugar
– 1 teaspoon sea salt
– 1 teaspoon vanilla extract
Instructions:
To make the cake:
1. Preheat the oven to 350°F (180°C). Grease two 9-inch (23cm) round cake pans.
2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
3. In a large bowl, use an electric mixer to beat the butter and sugar until light and fluffy, about 3 minutes.
4. Beat in eggs one at a time, followed by vanilla extract.
5. With the mixer on low speed, gradually add the flour mixture to the wet ingredients and mix until just combined.
6. Fold in diced apples and chopped pecans.
7. Divide the batter evenly between the prepared pans and smooth the tops.
8. Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
9. Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
To make the caramel glaze:
1. In a small saucepan, combine heavy cream, butter, granulated sugar, and sea salt. Place over medium heat and cook, stirring occasionally, until the sugar has dissolved.
2. Bring the mixture to a boil, then reduce the heat to medium-low and simmer for about 5-7 minutes, or until the caramel turns a deep amber color.
3. Remove from heat and stir in vanilla extract. Let cool slightly.
To assemble the cake:
1. Once the cakes are completely cool, place one layer on a serving plate or cake stand.
2. Drizzle the caramel glaze over the top of the first layer.
3. Place the second layer on top and drizzle with more caramel glaze, if desired.
Tips and Variations:
– To ensure the cake is moist, don’t overmix the batter.
– Use a variety of apples, such as Granny Smith and Gala, for a nice balance of sweet and tart.
– Add a sprinkle of sea salt on top of the cake for extra flavor and texture.
– Experiment with different types of nuts, such as walnuts or hazelnuts, for a unique flavor combination.
