Instructions:
1. Cook the spaghetti: Bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
2. Make the bolognese sauce: Heat 2 tablespoons of olive oil in a large pot over medium heat. Add the chopped onion and cook until translucent (5 minutes).
3. Add the garlic, carrot, and beef: Add the minced garlic and cook for 1 minute. Then, add the chopped carrot and cook for 2 minutes. Add the minced beef, breaking it up with a spoon, and cook until browned (5-7 minutes).
4. Add the tomatoes and herbs: Add the canned diced tomatoes, dried basil, and dried oregano. Season with salt and pepper to taste. Stir well to combine.
5. Simmer the sauce: Reduce heat to low and simmer the sauce for 20-30 minutes, stirring occasionally.
6. Combine the spaghetti and sauce: Add the cooked spaghetti to the bolognese sauce. Toss well to combine, adding some reserved pasta water if the sauce seems too thick.
7. Serve and enjoy: Serve hot, topped with grated Parmesan cheese.
