French yogurt cake no eggs

Ingredients

– 1 1/2 cups (190g) all-purpose flour
– 1 cup (200g) granulated sugar
– 1/2 cup (120g) plain whole-milk yogurt
– 1/2 cup (120ml) vegetable oil
– 2 teaspoons baking powder
– 1 teaspoon vanilla extract
– 1/4 teaspoon salt

Instructions

1. Preheat the oven to 350°F (180°C). Grease a 9-inch (23cm) round cake pan and line the bottom with parchment paper.
2. In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
3. In a large bowl, whisk together the yogurt, oil, and vanilla extract.
4. Add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.
5. Pour the batter into the prepared cake pan and smooth the top.
6. Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
7. Remove from the oven and let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

– Use a high-quality yogurt for the best flavor.
– Don’t overmix the batter, as this can result in a dense cake.
– You can substitute the vegetable oil with melted butter for a richer flavor.
– Add some flavorings like lemon zest, orange extract, or chopped nuts to the batter for extra flavor.
– Dust the cake with powdered sugar before serving for a beautiful presentation.
