For the Ground Beef Filling:
– 1 lb (450g) ground beef
– 1 medium onion, diced
– 2 cloves garlic, minced
– 1 packet taco seasoning (or homemade blend)
– 1/2 cup shredded cheddar cheese
– 1/4 cup chopped fresh cilantro
For the Creamy Sauce:
– 1 cup sour cream
– 1/2 cup mayonnaise
– 1 tablespoon lime juice
– 1 teaspoon dried oregano
– Salt and pepper, to taste
For the Wraps:
– 8-10 large flour tortillas
– Shredded lettuce
– Diced tomatoes
– Shredded cheese (Monterey Jack or Cheddar)
– Sliced black olives
– Chopped cilantro
Instructions
To Prepare the Ground Beef Filling:
1. Cook the ground beef in a large skillet over medium-high heat, breaking it up with a spoon as it cooks.
2. Once browned, add the diced onion and minced garlic. Cook until the onion is translucent.
3. Add the taco seasoning packet (or homemade blend) and stir to combine. Cook for 1-2 minutes.
4. Stir in the shredded cheddar cheese and chopped cilantro. Cook until the cheese is melted.
To Make the Creamy Sauce:
1. In a medium bowl, whisk together the sour cream, mayonnaise, lime juice, and dried oregano.
2. Season with salt and pepper to taste.
3. Refrigerate the sauce for at least 30 minutes to allow the flavors to meld.
To Assemble the Wraps:
1. Warm the large flour tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
2. Spoon about 1/2 cup of the ground beef filling onto the center of each tortilla.
3. Top with shredded lettuce, diced tomatoes, shredded cheese, sliced black olives, and chopped cilantro.
4. Drizzle the creamy sauce over the top.
5. Fold the bottom half of the tortilla up over the filling, then fold in the sides and roll the wrap up tightly.
6. Serve immediately and enjoy!
