Ingredients:
For the cookie dough:
– 1 cup unsalted butter, softened
– 3/4 cup granulated sugar
– 1 cup brown sugar
– 2 large eggs
– 2 teaspoons vanilla extract
– 2 3/4 cups all-purpose flour
– 1 teaspoon salt
– 1 cup semi-sweet chocolate chips
For the ice cream:
– 1 1/2 quarts your favorite ice cream (we recommend a neutral flavor like vanilla or coffee)
For the assembly:
– 1 cup whipped cream
– Chocolate sauce or hot fudge (optional)
Instructions:
1. Make the cookie dough: In a large mixing bowl, cream together butter and sugars until light and fluffy. Beat in eggs and vanilla extract. Gradually mix in flour and salt. Stir in chocolate chips. Cover and refrigerate for at least 30 minutes.
2. Scoop the cookie dough: Once chilled, scoop cookie dough into balls, about 1 inch in diameter. You should end up with around 20-25 balls of dough.
3. Assemble the cake: In a 9-inch springform pan, create a layer of ice cream. Arrange a layer of cookie dough balls on top of the ice cream. Repeat this process until you run out of ingredients, ending with a layer of ice cream on top.
4. Freeze the cake: Place the cake in the freezer to set for at least 2 hours.
5. Top with whipped cream: Remove the cake from the freezer and top with whipped cream. You can also drizzle with chocolate sauce or hot fudge, if desired.
6. Serve: Slice and serve immediately.
Tips:
– Use high-quality ice cream for the best flavor.
– If using a different flavor of ice cream, choose a cookie dough flavor that complements it.
– Consider adding other mix-ins, like nuts or candy pieces, to the cookie dough for added texture and flavor.
– To ensure clean slices, dip your knife in hot water before cutting the cake.
