Ingredients:
– 1 pound boneless, skinless chicken breasts
– 12 oz spaghetti
– 2 tablespoons olive oil
– 1 onion, chopped
– 3 garlic cloves, minced
– 1 cup chicken broth
– 1 cup shredded mozzarella cheese
– 1/2 cup grated Parmesan cheese
– Salt and pepper to taste
– Fresh parsley, chopped (optional)
Instructions:
1. Cook spaghetti al dente, then set aside.
2. In a large skillet, heat olive oil over medium-high. Add chopped onion and cook until translucent.
3. Add minced garlic and cook for 1 minute.
4. Add chicken to the skillet and cook until browned and cooked through.
5. Add chicken broth, mozzarella cheese, and Parmesan cheese. Stir until cheese is melted.
6. Combine cooked spaghetti and chicken mixture. Season with salt and pepper to taste.
7. Serve hot, garnished with chopped parsley if desired.
