Ingredients

For the Cake Layers:

  • 3 cups all-purpose flour

  • 1 tsp salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tbsp vanilla extract
  • 1 ยฝ cups buttermilk

For the Whipped Cream Frosting:

  • 3 cups heavy whipping cream, chilled
  • ยพ cup powdered sugar
  • 1 tbsp vanilla extract

For the Fruit Toppings:

  • 1 pint fresh strawberries (sliced)
  • 1 pint fresh blueberries
  • 1 pint raspberries
  • 2 kiwis (peeled and sliced)
  • 1 cup fresh peach slices
  • Additional fruit of choice for garnish (optional)

Instructions

Step 1: Prepare the Cake Layers

  1. Preheat Oven: Preheat your oven to 350ยฐF (175ยฐC). Grease and flour three round cake pans (6-inch, 8-inch, and 10-inch) or line them with parchment paper.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. Cream Butter and Sugar: In a large bowl, beat the butter and sugar together until light and fluffy.
  4. Add Eggs and Vanilla: Beat in the eggs one at a time, then add the vanilla extract.
  5. Combine: Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk, beginning and ending with the dry ingredients.
  6. Bake: Divide the batter evenly among the prepared pans. Bake for 20โ€“25 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool: Let the cakes cool in their pans for 10 minutes, then transfer them to a wire rack to cool completely.

Step 2: Make the Whipped Cream Frosting

  1. Chill the Bowl: Place the mixing bowl and beaters in the freezer for 10 minutes.
  2. Whip the Cream: Beat the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form. Keep refrigerated until ready to use.

Step 3: Assemble the Cake

  1. Base Layer: Place the largest cake layer (10-inch) on a cake stand or serving platter. Spread a layer of whipped cream over the top and arrange slices of strawberries and peaches.
  2. Middle Layer: Add the middle cake layer (8-inch) and repeat the process with whipped cream and layers of blueberries and kiwi.
  3. Top Layer: Place the smallest cake layer (6-inch) on top. Spread whipped cream and decorate with raspberries and additional fruit slices.

Step 4: Garnish and Serve

  1. Spread a thin layer of whipped cream around the sides of the cake if desired, leaving some areas exposed for a rustic look.
  2. Garnish with a mix of fresh fruit on top and around the base for an elegant presentation.
  3. Chill for at least 1 hour before slicing to allow the cake to set.
