Ingredients:
For the cake:
– 2 1/4 cups all-purpose flour
– 2 teaspoons baking powder
– 1 teaspoon salt
– 1 cup unsalted butter, softened
– 1 3/4 cups granulated sugar
– 3 large eggs, room temperature
– 2 teaspoons pure vanilla extract
– 1 cup whole milk, room temperature
For the frosting:
– 1 cup unsalted butter, softened
– 2 3/4 cups powdered sugar
– 2 teaspoons strawberry extract
– 2-4 tablespoons strawberry puree or jam
– 2-4 tablespoons heavy cream
Instructions:
1. Preheat oven to 350°F (180°C). Grease and flour two 9-inch round cake pans.
2. In a medium bowl, whisk together flour, baking powder, and salt.
3. In a large mixing bowl, beat butter until creamy. Add sugar and beat until light and fluffy.
4. Beat in eggs one at a time, then beat in vanilla extract.
5. With the mixer on low speed, gradually add flour mixture and milk, alternating between the two, beginning and ending with flour mixture.
6. Divide batter evenly between prepared pans and smooth tops.
7. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
8. Allow cakes to cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
9. For the frosting, beat butter until creamy. Gradually add powdered sugar, beating until smooth and creamy.
10. Beat in strawberry extract and puree or jam.
11. Add heavy cream, starting with 2 tablespoons and adding more as needed, until frosting reaches desired consistency.
12. Once cakes are completely cool, place one layer on a serving plate and spread a thick layer of frosting on top. Place second layer on top and frost entire cake with remaining frosting.
