Malva Pudding Muffins

Ingredients

For the Muffins:

  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 tablespoon apricot jam
  • 1 tablespoon white vinegar
  • 1 tablespoon melted butter
  • 1/2 cup milk

For the Syrup:

  • 1/2 cup heavy cream
  • 1/4 cup unsalted butter
  • 1/4 cup granulated sugar
  • 1/4 cup hot water
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat and Prepare:
    • Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin or line it with paper liners.
  2. Mix Dry Ingredients:
    • In a bowl, sift together the flour, baking soda, and salt.
  3. Prepare Wet Ingredients:
    • In a separate bowl, beat the sugar and egg until light and fluffy. Mix in the apricot jam, vinegar, melted butter, and milk.
  4. Combine Wet and Dry Ingredients:
    • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Bake the Muffins:
    • Divide the batter evenly among the muffin cups. Bake for 12–15 minutes, or until a toothpick inserted into the center comes out clean.
  6. Prepare the Syrup:
    • While the muffins are baking, combine the cream, butter, sugar, hot water, and vanilla in a saucepan. Heat over medium heat, stirring until the sugar is dissolved and the mixture is smooth. Do not boil.
  7. Soak the Muffins:
    • Once the muffins are done baking, remove them from the oven and, while still warm, poke small holes in each muffin with a toothpick.
    • Pour the warm syrup over the muffins, ensuring they soak up all the goodness.
  8. Serve:
    • Let the muffins sit for 5–10 minutes to absorb the syrup. Serve warm with a dollop of whipped cream or a scoop of vanilla ice cream.

Tips:

  • For an extra flavor boost, add a pinch of cinnamon or nutmeg to the batter.
  • These muffins store well in an airtight container and can be reheated in the microwave for a gooey treat.
