Ingredients
For the Muffins:
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- Pinch of salt
- 1/2 cup granulated sugar
- 1 large egg
- 1 tablespoon apricot jam
- 1 tablespoon white vinegar
- 1 tablespoon melted butter
- 1/2 cup milk
For the Syrup:
- 1/2 cup heavy cream
- 1/4 cup unsalted butter
- 1/4 cup granulated sugar
- 1/4 cup hot water
- 1 teaspoon vanilla extract
Instructions
- Preheat and Prepare:
- Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin or line it with paper liners.
- Mix Dry Ingredients:
- In a bowl, sift together the flour, baking soda, and salt.
- Prepare Wet Ingredients:
- In a separate bowl, beat the sugar and egg until light and fluffy. Mix in the apricot jam, vinegar, melted butter, and milk.
- Combine Wet and Dry Ingredients:
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Bake the Muffins:
- Divide the batter evenly among the muffin cups. Bake for 12–15 minutes, or until a toothpick inserted into the center comes out clean.
- Prepare the Syrup:
- While the muffins are baking, combine the cream, butter, sugar, hot water, and vanilla in a saucepan. Heat over medium heat, stirring until the sugar is dissolved and the mixture is smooth. Do not boil.
- Soak the Muffins:
- Once the muffins are done baking, remove them from the oven and, while still warm, poke small holes in each muffin with a toothpick.
- Pour the warm syrup over the muffins, ensuring they soak up all the goodness.
- Serve:
- Let the muffins sit for 5–10 minutes to absorb the syrup. Serve warm with a dollop of whipped cream or a scoop of vanilla ice cream.
Tips:
- For an extra flavor boost, add a pinch of cinnamon or nutmeg to the batter.
- These muffins store well in an airtight container and can be reheated in the microwave for a gooey treat.
