Instructions:
Step 1: Prepare the Lamb
1. Preheat the air fryer to 400°F (200°C).
2. In a small bowl, mix together olive oil, lemon juice, garlic, thyme, and rosemary.
3. Brush the mixture evenly onto both racks of lamb, making sure to coat all surfaces.
4. Season with salt and pepper to taste.
Step 2: Air Fry the Lamb
1. Place the lamb racks in the air fryer basket, leaving about 1 inch (2.5 cm) of space between them.
2. Cook the lamb for 12-15 minutes per side, or until it reaches your desired level of doneness.
3. Use a meat thermometer to check for internal temperatures: 130°F (54°C) for medium-rare, 140°F (60°C) for medium, and 150°F (65°C) for medium-well.
Step 3: Prepare the Roasted Garlic Aioli
1. Preheat the oven to 400°F (200°C).
2. Cut the top off each head of garlic, drizzle with olive oil, and wrap in foil.
3. Roast the garlic in the oven for 30-40 minutes, or until the cloves are tender and mashed.
4. Squeeze the roasted garlic cloves into a bowl.
5. Mix in mayonnaise, lemon juice, Dijon mustard, salt, and pepper until smooth.
Step 4: Serve
1. Slice the air-fried lamb racks into chops.
2. Serve with roasted garlic aioli spooned over the top.
3. Garnish with fresh herbs, if desired.
