Angel Chicken Rice

Ingredients

– 1 cup uncooked white rice
– 2 cups chicken broth
– 1 tablespoon olive oil
– 1 small onion, diced
– 2 cloves garlic, minced
– 1 cup diced cooked chicken (rotisserie chicken works well)
– 1 cup mixed frozen vegetables (peas, carrots, corn)
– 2 teaspoons dried thyme
– Salt and pepper, to taste
– 1/4 cup grated cheddar cheese (optional)

Instructions

1. Heat oil and sauté onion: In a large saucepan, heat olive oil over medium heat. Add diced onion and cook until translucent, about 3-4 minutes.
2. Add garlic and cook: Add minced garlic and cook for 1 minute, until fragrant.
3. Add rice and cook: Add uncooked rice to the saucepan and cook for 1-2 minutes, stirring constantly, until the rice is lightly toasted.
4. Add chicken broth and bring to a boil: Add chicken broth to the saucepan and bring to a boil.
5. Reduce heat and cover: Reduce heat to low, cover the saucepan with a tight-fitting lid, and simmer for 15-20 minutes, or until the rice is tender and the liquid has been absorbed.
6. Fluff rice with a fork: Once the rice is cooked, fluff it with a fork to separate the grains.
7. Add chicken, vegetables, and thyme: Stir in diced cooked chicken, mixed frozen vegetables, and dried thyme. Cook for an additional 2-3 minutes, until the vegetables are tender.
8. Season with salt and pepper: Season the Angel Chicken Rice with salt and pepper to taste.
9. Top with cheddar cheese (optional): If desired, sprinkle grated cheddar cheese on top of the Angel Chicken Rice and serve hot.
