– 1 small onion, diced
– 2 cloves garlic, minced
– 1 cup mixed vegetables (e.g., peas, carrots, corn)
– 2 teaspoons soy sauce
– 1 teaspoon oyster sauce (optional)
– Salt and pepper to taste
– 2 green onions, chopped (for garnish)
– 1 egg, beaten (for scrambled egg)
Instructions
1. Heat the oil in a large skillet or wok over medium-high heat.
2. Add the diced beef and cook until browned, about 3-4 minutes. Remove from the skillet and set aside.
3. Add the diced onion and minced garlic to the skillet and cook until the onion is translucent.
4. Add the mixed vegetables to the skillet and cook for 2-3 minutes.
5. Add the cooked rice to the skillet, breaking up any clumps with a spatula. Stir-fry the rice with the vegetables for about 5 minutes.
6. Add the cooked beef, soy sauce, and oyster sauce (if using) to the skillet. Stir-fry everything together for another minute.
7. Push the rice mixture to one side of the skillet. Crack in the beaten egg and scramble it until cooked through. Then, mix the egg with the rice.
8. Season the beef fried rice with salt and pepper to taste.
9. Transfer the beef fried rice to a serving platter and garnish with chopped green onions.

– Use different seasonings like hoisin sauce or sesame oil to give the dish more flavor.
