Here’s a recipe for a Berrylicious Strawberry Crunch Cheesecake:

Ingredients:

For the Crust:

– 1 1/2 cups graham cracker crumbs
– 1/4 cup granulated sugar
– 6 tablespoons (84g) unsalted butter, melted

For the Cheesecake:

– 16 ounces (450g) cream cheese, softened
– 1/2 cup granulated sugar
– 4 large eggs, separated
– 1 teaspoon vanilla extract
– 1 cup sour cream

For the Strawberry Topping:

– 2 cups sliced strawberries
– 1/4 cup granulated sugar
– 2 tablespoons cornstarch
– 2 tablespoons lemon juice

For the Crunch Topping:

– 1 cup chopped pecans or walnuts
– 1/2 cup granulated sugar
– 1/4 cup light brown sugar
– 1/2 cup cold unsalted butter, cut into small pieces

Instructions:

1. Preheat oven to 350°F (180°C).
2. Prepare the crust: Mix crumbs, sugar, and melted butter. Press into a 9-inch springform pan.
3. Prepare the cheesecake: Beat cream cheese until smooth. Add granulated sugar and beat until combined. Beat in eggs, one at a time, followed by vanilla extract. Stir in sour cream.
4. Pour cheesecake batter into the prepared pan over the crust.
5. Bake for 55-60 minutes or until the edges are set and the center is slightly jiggly.
6. Prepare the strawberry topping: Mix sliced strawberries, granulated sugar, cornstarch, and lemon juice.
7. Prepare the crunch topping: Mix chopped nuts, granulated sugar, and light brown sugar. Add cold butter and mix until crumbly.
8. Assemble the cheesecake: Spread strawberry topping over the cooled cheesecake. Top with crunch topping.
9. Refrigerate for at least 4 hours or overnight.
