Instructions
1. Fill a large pot with the water, making sure the chicken will be fully submerged.
2. Add salt, carrots, celery, and garlic to the water, if using.
3. Bring the water to a boil over high heat.
4. Carefully add the chicken to the pot.
5. Reduce the heat to medium-low and simmer for 10-20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
6. Remove the chicken from the pot and let it cool.
7. Strain the broth and discard the solids, if desired.
