– 2 tbsp butter
Instructions
1. Heat oil in a large Dutch oven over medium heat.
2. Add onion and cook until softened, about 5 minutes.
3. Add garlic and cook for 1 minute.
4. Add fish fillets, skin side up (if they have skin).
5. Pour in fish stock, white wine (if using), thyme, and parsley.
6. Season with salt and pepper.
7. Cover the pot and bring to a simmer.
8. Transfer to preheated oven (300°F/150°C) and braise for 12-15 minutes or until fish is cooked through.
9. Remove pot from oven and carefully remove fish fillets.
10. Stir in butter until melted.
11. Serve fish with braising liquid spooned over the top.
