– 2 1/4 cups all-purpose flour

Instructions
1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
3. In a large bowl, beat the butter and granulated sugar until light and fluffy, about 2-3 minutes.
4. Beat in the powdered sugar until well combined.
5. Beat in the eggs one at a time, followed by the vanilla extract.
6. Gradually mix in the flour mixture until just combined, being careful not to overmix.
7. Stir in the chopped pecans.
8. Use a cookie scoop or spoon to form the dough into balls, about 1 inch (2.5 cm) in diameter. Place the balls onto the prepared baking sheet, leaving about 2 inches (5 cm) of space between each cookie.
9. Bake for 12-14 minutes, or until the edges are lightly golden brown.
10. While the cookies are baking, prepare the powdered sugar coating by placing about 1 cup of powdered sugar in a shallow dish.
11. Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes.
12. Roll the warm cookies in the powdered sugar to coat, then place them on a wire rack to cool completely.
13. Repeat the rolling process in the powdered sugar once more after the cookies have cooled.
