Ingredients
– 1 (32 oz) bag of Tater Tots
– 1 1/2 pounds boneless, skinless chicken breasts, cut into 1-inch pieces
– 6 slices of bacon, diced
– 1 medium onion, diced
– 2 cloves of garlic, minced
– 1 cup of shredded cheddar cheese
– 1/2 cup of shredded Monterey Jack cheese
– 1/2 cup of milk
– 1 teaspoon of dried thyme
– Salt and pepper, to taste
Instructions
1. Preheat oven to 400ยฐF (200ยฐC).
2. Cook bacon in a large skillet over medium heat until crispy. Remove from heat and set aside.
3. In the same skillet, add diced onion and cook until softened. Add garlic and cook for an additional minute.
4. Add chicken to the skillet and cook until browned and cooked through.
5. Spread half of the Tater Tots in the bottom of a 9×13-inch baking dish.
6. Top Tater Tots with cooked chicken mixture, followed by cooked bacon, shredded cheese, and remaining Tater Tots.
7. In a small bowl, mix together milk and thyme. Pour mixture over the top of the casserole.
8. Cover dish with aluminum foil and bake for 45 minutes.
9. Remove foil and continue baking for an additional 15-20 minutes, or until Tater Tots are golden brown and cheese is melted and bubbly.
10. Remove from oven and let cool for a few minutes before serving.
