Ingredients
– 1 1/2 quarts cherry ice cream
– 1 1/2 quarts chocolate ice cream
– 1 cup crushed chocolate sandwich cookies (e.g., Oreos)
– 1 cup maraschino cherries, drained and chopped
– 1 cup whipped cream
– 1 cup chocolate shavings or chocolate chips
– 1 tablespoon cherry extract (optional)
Instructions
1. Prepare the crust: In a medium bowl, mix together the crushed cookies and melted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan. Freeze for 10 minutes.
2. Assemble the cake: Spread the cherry ice cream over the crust. Freeze for 30 minutes. Then, spread the chocolate ice cream over the cherry layer. Freeze for an additional 30 minutes.
3. Add the cherry topping: In a small bowl, mix together the chopped cherries and cherry extract (if using). Spread the cherry mixture over the chocolate ice cream layer.
4. Top with whipped cream and chocolate: Spread the whipped cream over the cherry topping. Sprinkle the chocolate shavings or chocolate chips over the whipped cream.
5. Freeze and serve: Freeze the cake for at least 2 hours or overnight. Remove from the freezer 10-15 minutes before serving. Slice and serve.
