Ingredients:
For the Pasta:
– 1 pound (450g) fettuccine pasta
For the Chicken:
– 1 1/2 pounds (680g) boneless, skinless chicken breasts, cut into 1-inch (2.5cm) pieces
– 1 teaspoon dried basil
– 1 teaspoon dried oregano
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
For the Broccoli:
– 3 cups (210g) broccoli florets
For the Alfredo Sauce:
– 1 cup (240ml) heavy cream
– 1/2 cup (120g) unsalted butter
– 1 cup (250g) grated Parmesan cheese
– 2 cloves garlic, minced
– Salt and pepper, to taste
For the Topping:
– 1 cup (120g) grated mozzarella cheese
– 1/4 cup (30g) chopped fresh parsley
Instructions:
1. Preheat oven: Preheat the oven to 375°F (190°C).
2. Cook pasta: Cook the fettuccine pasta according to package instructions until al dente. Drain and set aside.
3. Prepare chicken: In a medium bowl, combine chicken, basil, oregano, salt, and pepper. Mix well.
4. Cook chicken: In a large skillet, cook the chicken over medium-high heat until browned and cooked through, about 5-6 minutes. Remove from heat and set aside.
5. Steam broccoli: In a separate pot, steam the broccoli florets until tender, about 3-4 minutes. Drain and set aside.
6. Make Alfredo sauce: In a medium saucepan, melt the butter over medium heat. Add garlic and cook for 1 minute. Pour in heavy cream and bring to a simmer. Reduce heat to low and let simmer for 2-3 minutes. Stir in Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
7. Assemble: In a large bowl, combine cooked pasta, chicken, broccoli, and Alfredo sauce. Mix well to combine.
8. Transfer to baking dish: Transfer the pasta mixture to a 9×13-inch (23x33cm) baking dish.
9. Top with mozzarella cheese: Sprinkle mozzarella cheese evenly over the top of the pasta mixture.
10. Bake: Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
11. Garnish: Sprinkle chopped parsley over the top of the baked Alfredo.
12. Serve: Serve hot and enjoy!
Tips and Variations:
– To add some crunch, sprinkle some chopped breadcrumbs or grated Parmesan cheese on top of the mozzarella cheese before baking.
