Chicken Skewers

Ingredients:

– 1 pound boneless, skinless chicken breast or thighs, cut into 1-inch pieces
– 1/4 cup olive oil
– 2 cloves garlic, minced
– 1 tablespoon lemon juice
– 1 teaspoon dried oregano
– Salt and pepper, to taste
– 10-12 bamboo skewers, soaked in water for 30 minutes
– Optional: bell peppers, onions, cherry tomatoes, mushrooms, and other vegetables of your choice

Instructions:

1. Preheat grill to medium-high heat.
2. In a large bowl, whisk together olive oil, garlic, lemon juice, and oregano.
3. Add the chicken to the bowl and toss to coat with the marinade.
4. Season with salt and pepper to taste.
5. Thread the chicken onto the skewers, leaving a small space between each piece.
6. Add optional vegetables to the skewers, if using.
7. Grill the skewers for 10-12 minutes, turning occasionally, or until the chicken is cooked through.
8. Serve hot with your favorite sides, such as rice, salad, or pita bread.

Tips:

– Make sure to soak the bamboo skewers in water for 30 minutes to prevent them from burning on the grill.
– If using wooden skewers, you can also brush them with oil before grilling to prevent burning.
– You can customize the recipe by using different vegetables, herbs, and spices.
– For a more intense flavor, you can marinate the chicken for up to 2 hours or overnight.
