Christmas Yummy Cake

Ingredients

For the Cake:

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1/2 cup orange juice
  • 1 cup mixed dried fruits (raisins, cranberries, or chopped apricots)
  • 1/2 cup chopped nuts (pecans or walnuts, optional)

For the Frosting:

  • 1 1/2 cups powdered sugar
  • 2–3 tablespoons milk
  • 1 teaspoon vanilla extract
  • Festive sprinkles or edible glitter for garnish

Instructions

  1. Preheat and Prepare the Pan:
    • Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or a loaf pan.
  2. Mix Dry Ingredients:
    • In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  3. Cream Butter and Sugar:
    • In a separate bowl, beat the butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  4. Combine Wet and Dry Ingredients:
    • Gradually add the flour mixture to the butter mixture, alternating with milk and orange juice. Mix until just combined.
  5. Fold in Fruits and Nuts:
    • Gently fold in the dried fruits and nuts. Pour the batter into the prepared pan and smooth the top.
  6. Bake:
    • Bake for 40–50 minutes (or until a toothpick inserted into the center comes out clean). Let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  7. Prepare the Frosting:
    • In a small bowl, mix powdered sugar, milk, and vanilla extract until smooth. Adjust the consistency with more milk or powdered sugar as needed.
  8. Decorate:
    • Drizzle the frosting over the cooled cake and decorate with festive sprinkles or edible glitter.

Tips:

  • For a richer flavor, soak the dried fruits in orange juice or rum for 30 minutes before adding to the batter.
  • This cake pairs wonderfully with a warm cup of cocoa or spiced mulled wine!
