Ingredients:
– 1 1/2 pounds boneless, skinless chicken breast or thighs, cut into 1-inch pieces
– 2 tablespoons olive oil
– 1 medium onion, chopped
– 3 cloves garlic, minced
– 1 cup all-purpose flour
– 1 cup chicken broth
– 1 cup heavy cream
– 1 cup shredded mozzarella cheese
– 1/2 cup shredded parmesan cheese
– 1 teaspoon dried basil
– 1 teaspoon dried oregano
– Salt and pepper, to taste
– 8 lasagna noodles
– Fresh parsley, chopped (optional)
Instructions:
1. Preheat oven to 375°F (190°C).
2. Cook lasagna noodles according to package instructions. Drain and set aside.
3. In a large skillet, heat olive oil over medium-high heat. Add chicken and cook until browned, about 5-7 minutes. Remove from heat and set aside.
4. In the same skillet, add chopped onion and cook until softened, about 3-4 minutes. Add garlic and cook for an additional minute.
5. Sprinkle flour over the onion mixture and cook for 1 minute. Gradually add chicken broth and heavy cream, whisking continuously. Bring mixture to a simmer and cook until thickened, about 2-3 minutes.
6. Stir in shredded mozzarella and parmesan cheese until melted. Add cooked chicken, dried basil, and dried oregano. Season with salt and pepper to taste.
7. Spread a layer of the creamy chicken mixture in the bottom of a 9×13-inch baking dish. Arrange 4 lasagna noodles on top.
8. Repeat the layers, starting with the creamy chicken mixture, then the noodles, and finally another layer of the creamy chicken mixture.
9. Top the final layer of creamy chicken mixture with shredded mozzarella cheese.
10. Cover the baking dish with aluminum foil and bake for 30 minutes. Remove foil and continue baking for an additional 10-15 minutes, or until the cheese is melted and bubbly.
11. Remove from oven and let it rest for 10-15 minutes before slicing and serving. Garnish with chopped parsley, if desired.
