Instructions
1. In a double boiler or a heatproof bowl set over a pot of simmering water, melt the white chocolate, stirring occasionally.
2. Remove the melted white chocolate from the heat and let it cool slightly.
3. In a separate bowl, whip the heavy cream until soft peaks form. Set aside.
4. In another bowl, whisk together the egg whites and granulated sugar until stiff peaks form. Set aside.
5. Add the vanilla extract to the cooled white chocolate and whisk until smooth.
6. Fold the whipped cream into the white chocolate mixture until well combined.
7. Gently fold the egg whites into the white chocolate mixture until no white streaks remain.
8. Spoon the mousse into a glass bowl or individual serving cups.
9. Cover with plastic wrap or aluminum foil and refrigerate for at least 2 hours or overnight.
