Crispy Chicken Schnitzel in a Creamy Dijon Sauce

Ingredients:

For the Chicken Schnitzel:

– 4 boneless, skinless chicken breasts
– 1 cup all-purpose flour
– 1 teaspoon paprika
– 1/2 teaspoon garlic powder
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 2 eggs
– 1 cup breadcrumbs (preferably Panko)
– Vegetable oil for frying

For the Creamy Dijon Sauce:

– 2 tablespoons butter
– 2 tablespoons all-purpose flour
– 1 cup heavy cream
– 2 tablespoons Dijon mustard
– 1 teaspoon dried thyme
– Salt and pepper to taste
– Fresh parsley or chives for garnish

Instructions:

Step 1: Prepare the Chicken Schnitzel:

1. Season the flour with paprika, garlic powder, salt, and pepper.
2. Dip each chicken breast in the flour mixture, then the eggs, and finally the breadcrumbs, pressing gently to adhere.
3. Heat about 1/2 inch (1 cm) of vegetable oil in a large skillet over medium-high heat.
4. Fry the breaded chicken breasts until golden brown and crispy, about 3-4 minutes per side.
5. Transfer the schnitzel to a paper towel-lined plate to drain excess oil.

Step 2: Make the Creamy Dijon Sauce:

1. In the same skillet, melt the butter over medium heat.
2. Add the flour and whisk to combine. Cook for 1 minute, stirring constantly.
3. Gradually pour in the heavy cream, whisking continuously to avoid lumps.
4. Bring the mixture to a simmer and cook until it thickens, about 2-3 minutes.
5. Stir in the Dijon mustard, thyme, salt, and pepper.

Step 3: Serve and Enjoy:

1. Place the crispy chicken schnitzel on a serving plate or platter.
2. Spoon the Creamy Dijon Sauce over the top of each schnitzel.
3. Garnish with fresh parsley or chives.
4. Serve immediately and enjoy!

Tips and Variations:

– For an extra crispy coating, you can chill the breaded chicken breasts in the refrigerator for 30 minutes before frying.
– If you prefer a lighter sauce, you can reduce the amount of heavy cream or substitute it with half-and-half or whole milk.
– Add some chopped fresh herbs like parsley, chives, or dill to the Creamy Dijon Sauce for extra flavor.
– Serve the Crispy Chicken Schnitzel with your favorite sides, such as mashed potatoes, roasted vegetables, or a green salad
