– 1 tablespoon butter
– 1 medium onion, chopped
– 3 cloves garlic, minced
– 2 cups broccoli florets
– 2 cups diced potatoes (about 2-3 medium-sized potatoes)
– 2 cups chicken broth
– 1 cup milk
– 1 cup shredded cheddar cheese
– 1 teaspoon dried thyme
– Salt and pepper to taste
Instructions
1. Add butter, onion, and garlic to the bottom of a 6-quart crockpot. Cook on low for 1 hour.
2. Add broccoli, potatoes, chicken broth, milk, thyme, salt, and pepper to the crockpot. Stir to combine.
3. Cook on low for 4-5 hours or high for 2-3 hours, or until potatoes are tender.
4. Use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches, then return to the crockpot.
5. Stir in shredded cheddar cheese until melted and well combined.
6. Taste and adjust seasoning as needed.
7. Serve hot, garnished with additional broccoli florets, shredded cheese, or a dollop of sour cream (optional).
