decadent chicken casserole with swiss cheese 🧀

Ingredients

– 1 1/2 pounds boneless, skinless chicken breast or thighs, cut into 1-inch pieces
– 2 tablespoons butter
– 1 medium onion, chopped
– 2 cloves garlic, minced
– 1 cup all-purpose flour
– 1 cup chicken broth
– 1/2 cup heavy cream
– 1 teaspoon dried thyme
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 2 cups shredded Swiss cheese
– 1 cup shredded cheddar cheese (optional)
– 1/2 cup crushed crackers (e.g., Ritz or saltines)

Instructions

1. Preheat oven: Preheat oven to 350°F (175°C).
2. Cook chicken: In a large skillet, melt butter over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove from heat and set aside.
3. Sauté onion and garlic: In the same skillet, add chopped onion and cook until softened, about 3-4 minutes. Add minced garlic and cook for an additional minute.
4. Make creamy sauce: Sprinkle flour over the onion mixture and cook for 1 minute. Gradually stir in chicken broth and heavy cream. Bring mixture to a simmer and cook until thickened, about 2-3 minutes. Stir in thyme, salt, and pepper.
5. Assemble casserole: In a large mixing bowl, combine cooked chicken, sautéed onion mixture, and creamy sauce. Stir until chicken is well coated.
6. Add cheese: Stir in shredded Swiss cheese and cheddar cheese (if using).
7. Transfer to baking dish: Transfer the chicken mixture to a 9×13-inch baking dish.
8. Top with crackers: Sprinkle crushed crackers over the top of the casserole.
9. Bake: Bake in preheated oven for 25-30 minutes, or until the top is golden brown and the casserole is heated through.
10. Serve: Serve hot and enjoy!
